Los papadzules son un antojito, un platillo tradicional y típico de Península de Yucatán, en realidad una variante de los tacos. Es un nombre de origen maya que significa "el alimento del amo" o también, "embarrado y remojado" (wikipedia). En realidad es un platillo mestizo, con notables influencias autóctonas- indígenas.

La receta es sencilla, son tortillas de maíz remojadas en una salsa de pepitas de calabaza, y rellenas de huevo cocido (al estilo de los tacos) y bañadas por último en una salsa de tomate con chile habanero (muy picante) y cebolla.

Generalmente se adornan con cebolla morada y chile habanero picados. Es popular de Yucatán (Campeche y Quintana Roo), aunque fuera de este territorio no es muy común.

  3. Epazote
  4. 1/4 kg tortilla
  5. 8 tomates

  1. Cocemos los huevos en agua hasta que veamos que la cáscara se raja. Los pelamos.
  2. En una olla ponemos a hervir agua con el epazote. Una vez que el epazote haya soltado su punto, la partamos del fuego y aguardamos a que esté fría.
  3. Le echamos la pepita molida y movemos la mezcla poco a poco hasta que observemos que tiene una consistencia cremosa.
  4. Para elaborar la salsa de Papadzul
  5. Hervimos en agua los tomates, se quita la cáscara y se licuan.
  6. En una sartén echamos aceite, el tomate ya licuado, un poco de cebolla picada, sal y, si lo desea muy picante, chile habanero asado.
  7. Lo freímos todo hasta que obtengamos una salsa espesita.
  8. Emplatado del Papdzul:
  9. Colocar en cada plato 4 "tacos" de huevo con la tortilla. Se bañan con la pepita y se adornan con la salsa de tomate.
  10. Este antojito se come caliente y si se quiere resaltar el picante con un chile habanero asado adicional.
