- Luego ponemos en una olla los trozos, los cubrimos de agua añadimos el zumo de limón y dejamos hervir 40 minutos, pasado el tiempo, escurrimos dejamos que enfrie, y la vamos despegando de la piel y quitando semillas.
- Lo deshilachamos con las manos y escurrimos bien sobre un paño de algodón, ahora lo pesamos y lo ponemos en una olla, añadimos la misma cantidad de azucar, la rama de canela, la canela en polvo y la piel de limón, lo ponemos a fuego lento, revolviendo con frecuencia durante 15 minutos aproximadamente.
- Hervimos los frascos y las tapas, y los llenamos, los cerramos bien, y los ponemos al baño maria en una olla 30 minutos, listo para disfrutar tal cual, o en tartas, empanadas etc.
